In the distant Colombia, precisely in the municipality of Morales in Cauca,born coffee is Specialty Colombia Cauca – Women’s Coffee Project.
A micro-lot born from the selection of three varieties of Arabica coffee, Castillo, Colombia and Caturra.
Grown on about 40 hectares of land, with full sun exposure and at an altitude of 1800/2000 meters above sea level, Colombia Cauca is a coffee with a feminine history.
The processing is completely managed by about 21 Cafeteras women of the Asocalm cooperative in a continuous process of study to improve the yield and quality of crops from season to season.
The cherries are selected and hand-picked and then processed with a 24-hour fermentation and drying in full sun on African beds.
In tasting it is characterized by its profile, rich and balanced: at the opening, precious notes of fig jam with the marked and delicate acidity of red apple, leave room for the sweetness of caramel with final nuances of dark cocoa.
