The rich volcanic clay soil and the exploit of the natural shade of cypress trees, created an exceptional ecosystem for the development of the Bourbon and Pacas coffee varieties.
In addition, Mauricio continuously experiments with new techniques for manufacturing, combining them with virtuous practices of eco-sustainability. A pioneer in the reuse of rainwater accumulates for various processes in the small mill owned.
His innovations led him to conquer for ten years in a row, the “Cup of excellence” in his territory.
