The specialty coffees produced in this region stand out continuously in the top positions of the “Cup of Excellence” competitions.

Eudoro josè Guillen Jarquin inherited the “Los Pirineos” farm, which is a 70-hectare estate, from his father, who bought it in 1965. Focusing purely on the production of Specialty Coffee, he decided to create a “wetmill” directly on his farm. . This allows him to have total control for his experiments on fermentation times and on the natural and honey processing of micro lots carefully selected. The pursuit of perfection is his mission. We managed to select a micro lot processed with the Honey method. In the cup it is particularly balanced, with notes of chocolate, hazelnuts accompanied by a pleasant and light acidity.

Nicaragua does not stand out for its high altitudes, unlike other Central American coffee-growing countries, but the unique microclimates of the northern area and the Jalapa mountain range have been key components for the production of specialty coffee. The mountains offer a cool climate all year round which allows the coffees to ripen slowly, while the processing takes place in the valley at the base of the mountain range where the climate is hot and dry.

We see great potential in the Nueva Segovia region, with its higher altitudes and the growing interest of producers for quality varieties such as arabica caturra (red and yellow) and processing with experimental technique.
